Can't Get Enough Pumpkin?

Listed as one of the Culinary Institute of America's "Quick Breads", this Pumpkin Bread recipe is an easy way to get more pumpkin into your diet. Quick breads bake up like cakes or muffins rather than traditional breads because of their lack of a yeast leavener, which is replaced by chemical leaveners (baking poweder and baking soda in this case). Nevertheless, with a delicious, warming combo of pumpkin, cinnamon and nutmeg this "bread" recipe is sure to please this holiday season.
